Preparation
Wash the potatoes, in a pot pour enough water and add them. Let cook for 35 minutes, remove from heat, let cool and reserve. Once the potatoes are cold cut them into segments and reserve.
Heat a deep pot or pan add the oil, let it heat and add the potatoes. Let fry for 8 minutes or until obtaining the dorado of your preference. Remove the oil and place on absorbent paper towels to remove excess oil.
In a bowl add flour, paprika, garlic, salt, chicken broth, oregano, thyme, onion and black pepper; Mix the ingredients until they are well integrated. Add the potatoes cut into segments and pass through the previously seasoned flour until they are well covered. Remove the excess flour and reserve for two hours.
Return them to the pot and let them finish cooking and stay golden brown.
