Ingredients: 2 tablespoons olive oil, divided in half; 1 bunch asparagus, cut into small pieces; 1 cup lettuce, fresh Eva®; 1 pinch salt; 1 pinch white pepper; 3 cups chicken broth; 1 white onion, finely chopped; 1 cup Arborio rice; 1 leaf bay; 1 cup white wine; 1 teaspoon salt; 1 stick butter, in cubes; 4 tablespoons Parmesan cheese, grated for decoration

In a small pot over medium heat, heat one tablespoon of olive oil and cook the asparagus until crisp. Add the fresh Eva® lettuce and cook for 3 minutes. Season. Reserve 1/3 of the asparagus and blend the rest with the lettuce and 1/3 of the chicken broth until you obtain a homogeneous mixture.
