Ingredients: 3 cups water; 1 1/2 cups rice, long grain; 2 limes, juice and zest; 1/2 cups almonds, lightly toasted; 3 chives, chopped; 1/4 teaspoons pepper; 1 teaspoon salt

Boil the broth or water with a handful of salt over high heat. Add the rice, cover, and let it cook for 20 minutes on low heat or until the rice is soft and fluffy. Add the lemon juice and zest, almonds, chopped green onions, salt, and pepper. Gently stir with a fork to mix. Season again if necessary.
