Preparation
Peel and cut the potatoes in half.
Place the potatoes in a pot with water and salt and put over medium heat until it boils. Reduce the heat to low and cook for 5 more minutes.
Strain the potatoes and allow them to strain for 10 minutes, ensuring they are thoroughly dry.
Preheat the oven to 180 degrees centigrade.
In a large skillet, heat the oil and cook the potatoes for 1 minute. Pour the potatoes with the oil in a refractory to bake and season with salt and pepper.
Bake potatoes for 40 minutes or until crisp, turn potatoes over, add garlic cloves, mix and return to the oven for 20 more minutes.
