Preparation
Preheat the oven to 200 degrees Celsius.
In a small saucepan, melt the coconut oil over medium heat.
In a bowl, bathe the sweet potatoes with the oil, salt and pepper. Spread the sweet potatoes in a single layer in the baking dish. Bake in the oven, stirring occasionally for about 40 minutes or until the sweet potatoes are tender.
Pour the sweet potatoes into a bowl to serve and sprinkle with the lemon zest.
