Preparation
Heat the oil and fry the onion, pepper and carrot for approximately two minutes.
Add the garlic, poblano peppers, pumpkin and mushrooms.
Season to taste and cook approximately 5 minutes.
Add the shredded Oaxacan cheese and cover it so that it is gratinated.
