Ingredients

20 portions
  • 1 cup broccoli, cooked and chopped
  • 2 cups quinoa, cooked and cold
  • 1/2 cups cheddar cheese, grated
  • 2 eggs
  • 2 tablespoons milk
  • 1/2 cups flour
  • 1 teaspoon royal baking powder
  • 1 pinch salt
  • 1/2 cups olive oil, to fry

Preparation

In a large bowl, mix broccoli, quinoa, cheese, milk, salt and eggs.
Add flour and royal, to form a thick mixture, similar to hot cakes.
In a pan heat a tablespoon of olive oil, pour 1/3 cup of the mixture. Cook until golden brown on both sides.

PRESENTATION

Accompany with lemon or Greek yogurt.
