Carrot enchiladas are a delicious meal and super easy to prepare, you will not regret it!

Ingredients

4 portions
  • 4 carrots, washed and grated
  • 1/2 onions, cut into thin slices
  • 1 garlic, chopped
  • salt, and pepper to taste
  • corn tortillas
  • cascabel chili peppers

Preparation

In a pan heat a little oil and add the onion and chopped garlic and stir while the onion takes a transparent color.
Add the carrot to the onion and add salt and pepper until the carrot softens.
With the chili pepper, make a sauce and add it in a pan, put it to heat with a little oil.
Place the tortillas for a few seconds inside the sauce, this is just to give the tortilla a little color.
Place the carrot stew inside the tortilla and wrap it in a flute.

PRESENTATION

You can accompany it with a red rice and gratin cheese on the enchiladas.

TIPS

Make sure not to moisten the tortilla a lot or this will cause it to break and be uncomfortable when eating it.
