Preparation
Peel and chop the carrots in small cubes.
In a medium-sized pot the vegetable oil is heated.
Add the carrots and brown for 5 minutes.
Add the sugar and cinnamon, cover the pot and cook until the carrots are tender (about 15 minutes).
Remove the lid and continue cooking until caramelized.
