The first thing we need to do is roast the poblano peppers; we will do this by placing them directly on the stove flame until they are toasted on all sides and completely blackened. Once we have roasted all the peppers, we must wash them under running water. Remove the seeds and cut them into thin strips. If you find the peppers very spicy, I recommend soaking them for 1 or 2 hours in hot salted water.
