Quinoa confetti is an easy, fun and nutritious recipe. It is a very versatile recipe because you can make it to your liking; that is, to put the vegetables that you like the most, making it as colorful as you want. A delight to enjoy.

  • 1 1/2 cups Vegetables soup, (low in sodium) or water
  • 1 cup quinoa, well rinsed and drained
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper
  • 1 cup mixed vegetable, frozen (carrots, peas, corn, etc.)


Add the vegetable broth or water in a medium saucepan over medium heat, bring to a boil.
Add the quinoa, salt and pepper, change to low heat, cover the pan with a lid. Cook until the liquid has evaporated and the quinoa is tender, about 15 minutes. Remove the lid, pour the vegetables and move with a fork. Cover again so that the vegetables are cooked with the steam of the quinoa.
