Preparation
Wash the sweet potato, tap it with a brush. Remove the peel with a knife or peeler and cut into very thin slices. If you have a mandolin, help yourself to do them in a standardized way.
In a large pot pour plenty of olive oil, wait until it is very hot and place the slices of sweet potato until they are crispy. Be careful not to burn, or to remain watery.
As soon as you put them out of the oil, you put them to your liking, leave them to cool and they are ready to taste.
