  • 1 cup corn kernels
  • 1 tablespoon epazote, finely chopped
  • 6 pumpkins, cut into slices
  • 6 roma tomatoes, cut into slices
  • 1 cup panela cheese, cut into slices
  • enough salt and pepper
  • 3 tablespoons olive oil
  • 1/2 cups mashed tomatoes
  • 1 cup manchego cheese, grated
  • enough epazote, , in a sheet

Preparation

Preheat the oven to 180 ° C (356°F)
In a bowl mix the onion with the garlic, the serrano pepper, the corn and the epazote. Reserve.
In an ovenproof refractory dish, arrange the pumpkins alternating with the tomatoes, the panela cheese and the corn mixture.
Add the olive oil, the tomato puree, season with salt and pepper. Sprinkle the Manchego cheese and bake about 15 to 20 minutes or until the vegetables are cooked.
Remove from oven, decorate with fresh epazote and serve.

PRESENTATION

On a plate accompanied by white rice, decorated with epazote and served with cream.

Quedan deliciosas!! A mis hijos pequeños les encantaron, felicitaciones, es una receta riquísima. Un poco elaborada pero vale la pena, no les puse nada de sal ni pimienta, aún así quedaron deliciosas, con la sal del panela y del queso, las especias de la salsa de tomate, se sazono bien. Yo en vez de salsa de tomate normal,usé salsa de tomate para pasta boloñesa marca Hunts.
