Vegetarian Zucchini Lasagna

You won't believe how easy it is to prepare this delicious zucchini lasagna, besides being very economical, it's healthy and delicious. It is stuffed with mushrooms, carrots, celery, tomatoes and gratin with Manchego cheese; ideal to serve with wild rice.

Ingredients

6 servings
  • 1 tablespoon of margarine
  • 1 tablespoon of olive oil
  • 1/2 piece of onion finely chopped
  • 1 tablespoon of garlic
  • 1/4 of Cup of carrot finely chopped
  • 1/4 of Cup of celery finely chopped
  • 1 Cup of mushroom chopped
  • 1 Cup of tomato canned, chopped
  • 1/2 Cup of tomato puree
  • 1 Cup of Vegetables soup
  • 1 teaspoonful of dry thyme
  • 1 teaspoonful of Dried oregano
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper
  • 10 pieces of pumpkin
  • 2 cups of Manchego cheese grated
  • to taste of fresh basil leaf

    Preparation

    Preheat the oven to 180 ° C. (357° F)
    Add the margarine with the olive oil to a saucepan and cook the onion, garlic, carrot, celery, mushrooms and tomato until the vegetables release their juice.
    Add the tomato puree, vegetable broth, thyme, oregano, salt, and pepper and cook until thick. Set aside.
    On a board slice zucchini into thin ribbons using a vegetable peeler. With a knife cut slices of zucchini along, medium thick.
    In an oven proof dish place a bed of zucchini ribons, cover with tomato sauce and sprinkle with Manchego cheese. Repeat the process until the dish is filled, finish with tomato sauce, the grated cheese and arrange the zucchini strips in the shape of a roll.
    Bake for 20 minutes, remove from the oven and garnish with fresh basil.

    PRESENTATION

    Garnish with fresh basil and serve with wild rice.

    TIPS

    You can add the vegetables that you like to your lasagna.
