Ingredients

4 portions
  • 2 tablespoons oil
  • 1 teaspoon butter
  • 2 tomatoes, big
  • 1/4 onions, median
  • 1 branch epazote
  • 400 grams mushroom
  • 2 morita chili peppers
  • 1 pinch black pepper
  • 1 liter Water

Preparation

Chop the onion in half rings.
Chop the tomato into thin slices.
Cut a morita pepper and open it in half and reserve the other whole.
Gently rinse the mushrooms with water and disinfect them.
Once disinfected cut them into halves or quarters depending on the size.
Place a pot over medium heat and add the two tablespoons of oil, the teaspoon of butter, the chopped onion and the chili peppers, which are fried for 3 minutes.
Immediately add the tomato to fry 2 minutes and then add the mushrooms and at the same time add the water, the sprig of epazote, the pinch of pepper, the salt, and let it boil until the mushroom feels soft.

PRESENTATION

Serve hot in a deep dish.

TIPS

Be careful with the amount of epazote, because if it is fresh, its flavor will be strong and its flavor could predominate in the dish, which is why you should use a sprig. Watch the cooking so that the mushroom does not overcook and break.
