Jalisco style red pozole. Pre-cooked pozole corn saves you a lot of time and effort. The particular color and flavor of this pozole is due to the use of mirasol or guajillo chili.

  • 1 kilo hominy, pre-cooked
  • 1 head garlic
  • 1 kilo pork meat, in medium pieces
  • 1 tomtato, large
  • 100 grams mirasol chili pepper
  • salt, to taste
  • 1 pinch oregano
  • 1 teaspoon cumin
  • 1 clove garlic


Place the corn in a large pot, cover with water, add the garlic and salt to taste and cook over medium heat for 2 hours.
After that time, add the meat to the pot and cook for 1 hour or until the meat is very soft.
Meanwhile, boil the tomato until it has softened. Soak the chiles in hot water until they are soft, remove the seeds and stems and grind them together with the tomato, salt, oregano, cumin and 1 clove of garlic. Strain.
When the meat is already soft, remove it from the pot and shred it.
Pour the red sauce into the pot with the corn and bring it to a boil.Return the shredded meat to the pot, season to taste and bring it to a boil a few more minutes before serving.


Serve with chopped lettuce, chopped onion, radishes and a few drops of lemon juice. Accompany with corn tortilla chips.


If you don't want to shred the meat you can cut it but in small pieces.

Jitomate se refiere al rojo o al verde? Acá en la esquina norte de MX el jitomate es exclusivamente el verde, supongo por logica que para esta receta es el tomate rojo no? Gracias solo por corroborar.

Yo lo cocino con media cabeza de puerco con espinazo y dos patas de puerco partidas en 4 ( las patas se cocen aparte )y yo no le agrego jitomate cuando se va a guizar se le agrega la sal( se guiza con los chiles ajo 3 dientes comino y pimienta)
