Preparation
Heat the onion and chili in the hot butter. Then add the tomato, crush it, season and sauté.
Add the water, the potatoes, the garlic, the cilantro. Leave on low heat until the potatoes are cooked.
The eggs are broken in a separate dish and one by one they are thrown into the caldillo carefully. They are left to cook to taste and serve immediately.
