Preparation
In a saucepan put water to boil and put the tomatoes, onion, cinnamon, sugar to boil, until the tomatoes can remove the skin.
Once the tomatoes are cooked, remove the skin, and take a blender and see the tomatoes, the onion with a little of that water and liquefy by uncovering the blender and covering with a rag so as not to burn and let the steam out.
In another pot, fry the garlic a little with olive oil, until golden brown.
The prepared caldillo strain well and remove the cinnamon stick. Once it starts to boil, drop the tapioca and let it cook over high heat and stirring constantly so that it does not stick and let it cook until it is completely transparent.
On the other hand you can brown cubes of box bread to make croutons, or buy croutons to accompany the soup. And serve hot. Bon Appetite !!
