Ingredients: 4 cups water, chicken broth; 1 chicken breast; 1/2 onions; 1/2 bunches cilantro; salt; 1 tablespoon vegetable oil; 1 cup fideo pasta; 1/2 cups carrot , in small cubes; 1/2 cups potato , in small cubes; 1/2 cups zucchini , in small cubes; cilantro, for garnish; lemon , for garnish

Place the chicken breast, onion, and cilantro in a pot with water, season, and cook for 15 minutes or until the chicken is fully cooked. Remove the chicken, shred it, and reserve the broth. Heat the oil in a pot, add the noodles, and cook for 5 minutes or until slightly golden. Pour in the reserved chicken broth, add the carrot and potato, and cook for 5 minutes. Then, add the zucchini and cook for 2 more minutes. Reserve.
