Ingredients: 3 tablespoons butter; 3/4 cups onion, in large cubes; 1 clove garlic; 2 packages Eva® Hydroponic Spinach; 3 cups milk; 1 cup table cream; salt; pepper; añejo cheese, for garnish; Eva® Hydroponic Spinach, fresh, for garnish

Heat the butter in a pot over medium heat and sauté the onion and garlic for 3 minutes, until completely translucent. Then, add Eva® Hydroponic Spinach and sauté for a few more minutes. Add the milk and cream, wait for it to boil, then season with salt and pepper and remove from heat. Blend the above for 3 minutes and return to the pot to heat the cream again. Strain if necessary and season again if needed.
