Do you love Cream of Potato and Cheese? This version will become your favorite. Enjoy this easy traditional recipe made with Queso Chiapas, which gives it an acidic touch and the spicy flavor of chili pepper. This recipe is perfect to serve as a first course, in addition to being very consistent. To decorate this Potato and Cheese Soup we recommend using fried Arbol chiles. Ingredients

2 portions
  • 2 tablespoons oil
  • 2 chicken breasts, skinless
  • black pepper
  • water
  • 2 celeries, the stem without leaves
  • 1/2 white onions
  • 2 potatoes, cut in pieces
  • 100 grams cheese, Chiapas
  • 2 pumpkins, cut in cubes
  • 3 chilaca chili, roasted and steamed in rajas
  • 2 tomatoes, in cubes
  • asadero cheese, in cubes, to decorate
  • cream, - ranch, to decorate
  • árbol chile, roasted or fried, to decorate

Preparation

In a saucepan over medium heat, heat the oil and fry the chicken breasts previously seasoned with salt and pepper until browned.
Fill with water and add the celery, onion, garlic and potatoes. Bring it to a boil, cover and cook until the potatoes are very soft and the chicken is cooked.
Remove the chicken, onion, celery and incorporate the Chiapas cheese. With your Bran® MultiQuick 725,using your Power bell accessory, process the soup until you obtain a smooth and homogeneous mixture.
Add the squash, chilaca (Pasilla negro chiles) and tomato to the soup, cook a few more minutes or until the vegetables are soft.
Serve the soup in bowls, accompany with chicken cut into slices and garnish with Asadero Cheese, ranch cream and chile de árbol.
