Traditional Pumpkin Flower Cream

This cream of pumpkin flower has a rich and subtle flavor that combines the ingredients of the Mexican milpa with the typical and juicy white corn and a touch of epazote. Try this creamy preparation and consent to your family with this rich recipe.

Ingredients

4 portions
  • 3 tablespoons vegetal oil
  • 1 tablespoon butter
  • 3 cloves garlic, chopped, for cream
  • 1/2 onions, cut in medium cubes, for cream
  • 1/2 cups corn, White
  • 2 bunches squash blossom, without stem and clean, for cream
  • 3 leaves fresh epazote
  • 1 pinch salt
  • 1/2 cups chicken soup, or vegetables
  • 1 1/2 cups whole milk
  • enough squash blossom, to decorate
  • enough epazote, fried, to decorate

Preparation

Heat a pan over medium heat with the oil and butter, sauté the garlic with the onion, cook the corn with a bunch of pumpkin flower, season with the epazote and salt to your liking, add the broth and milk. Cook until it boils. Reservation.
Heat a pot with water until it reaches a boiling point, dip the rest of the pumpkin flower for 3 seconds, remove and submerge in cold water with ice.
Pour the previous preparations into the glass of the Vitamix®, close the lid tightly, select speed 1, turn on the blender and gradually increase the speed to 10 and then to high level. Blend for 6 minutes or until steam comes out through the hole in the lid.
Serve the cream in a deep dish decorated with pumpkin flower and epazote leaves. Enjoy

PRESENTATION

Serve the cream in a bowl and decorate with sour cream and a pumpkin flower.

TIPS

If you are going to refrigerate the pumpkin flower, wrap it in a wet napkin inside a plastic bag so it does not wilt.

Es muy fácil y rápida de preparar. El sabor queda muy bien. Si al servir le agregas granos de elote y un cuadrito de queso manchego, le da una consistencia riquísima.
