Delicious Tortilla Soup

Another version of tortilla soup that I found out there, and it turned out to be a delight.

Ingredients

4 portions
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 cloves garlic
  • 4 beefsteak tomatoes
  • 2 guajillo chilies
  • 2 chile de árbol peppers
  • 2 tortillas
  • 1 pinch White pepper
  • 1 pinch salt
  • 4 tablespoons Nestle media creama
  • 250 grams panela cheese, or fresh
  • 10 tortillas
  • 2 guajillo chilies, in a slice
  • 4 branches epazote
  • 2 avocados, in cubes

Preparation

For the caldillo de la sopa, heat a pot and pour the oil, sweat the onion, garlic and tomatoes, add the chilies and dry tortillas, cook until the ingredients change color slightly, add the epazote and season with white pepper, wait for it to boil and thicken.
Remove from heat and blend until everything is integrated, return to the same pot over low heat. Rectify the seasoning with salt.

PRESENTATION

To serve the soup with its garnishes, in a soup dish the hot pot serves, then a spoonful of half a cream per plate, two cheese sticks, the fried tortillas, the slices of fried chiles, a sprig of epazote and avocado.
