Place the shank in a pot with water, onion, and salt, and cook for 40 minutes. You will notice that during cooking, foam will start to rise to the surface of the water, which you should remove with a spoon or strainer, as they are impurities; try to keep the broth as clean as possible. Add the hominy and cook for 30 more minutes. Remove the onion from the broth, add the beans, serrano chili, and cilantro, and cook for another 10 minutes after it starts to boil.
