This soup is very rich and can be served as a main course, accompanied by a good bread.

Ingredients

8 servings
  • 4 spoonfuls of oil
  • 1/2 kilo of veal in cubes
  • 2 1/2 cups of onions chopped
  • 2 spoonfuls of red vinegar
  • 2 spoonfuls of flour
  • 1 tablespoon of paprika
  • 1/4 of Cup of tomato puree
  • 1 liter of beef broth
  • 2 potatoes in cubes
  • 1 green bell pepper chopped
  • 2 scallion chopped
  • 2 cloves of garlic
  • 1/2 teaspoonful of thyme
  • 1/2 teaspoonful of marjoram
  • 1 sheet of laurel

    Preparation

    In a saucepan heat oil and add the meat to begin to brown, 3 or 4 minutes. Add onions and cook 8 minutes. Put vinegar and let reduce 2 minutes. Add flour and cook stirring 1 minute over medium heat, put paprika and tomato puree, pepper and cook 2 or 3 minutes.
    Add the spices, garlic, salt, pepper and broth, boil until the meat is soft like 30 minutes. Put the potatoes and cook 20 minutes.
    Rectify the salt and put water if necessary to have the desired consistency. Serve in bowls and garnish with chopped chives.
