Ingredients

8 portions
  • 4 tablespoons oil
  • 1/2 kilos veal, in cubes
  • 2 1/2 cups onion, chopped
  • 2 tablespoons red vinegar
  • 2 tablespoons flour
  • 1 tablespoon paprika
  • 1/4 cups mashed tomatoes
  • 1 liter beef broth
  • 2 potatoes, in cubes
  • 1 green bell pepper, chopped
  • 2 chives, chopped
  • 2 cloves garlic
  • 1/2 teaspoons thyme
  • 1/2 teaspoons marjoram
  • 1 leave bay (laurel)

Preparation

In a saucepan heat oil and add the meat to begin to brown, 3 or 4 minutes. Add onions and cook 8 minutes. Put vinegar and let reduce 2 minutes. Add flour and cook stirring 1 minute over medium heat, put paprika and tomato puree, pepper and cook 2 or 3 minutes.
Add the spices, garlic, salt, pepper and broth, boil until the meat is soft like 30 minutes. Put the potatoes and cook 20 minutes.
Rectify the salt and put water if necessary to have the desired consistency. Serve in bowls and garnish with chopped chives.
