Ingredients: 4 tablespoons vegetable oil; 1/2 kilos veal, in cubes; 2 1/2 cups onion, chopped; 2 tablespoons red vinegar; 2 tablespoons flour; 1 tablespoon paprika; 1/4 cups tomato purée; 1/2 liters beef broth; 2 potatoes, in cubes; 1 green bell pepper, chopped; 2 chives, chopped; 2 cloves garlic; 1/2 teaspoons thyme; 1/2 teaspoons marjoram; 1 leaf bay

In a pot, heat oil and add the meat until it starts to brown, about 3 or 4 minutes. Add onions and cook for 8 minutes. Add vinegar and let it reduce for 2 minutes. Add flour and cook, stirring, for 1 minute over medium heat, then add paprika and tomato puree, bell pepper, and cook for 2 or 3 minutes. Add the spices, salt, pepper, and broth, and boil until the meat is tender, about 30 minutes. Add the potatoes and cook for 20 minutes.
