Ingredients

6 portions
  • 1/2 balls corn, cacahuatzintle or 8 sweet ears of corn
  • 6 to taste ancho chili pepper, deveined, ginned and soaked in hot water
  • 1 to taste onion
  • 3 cloves garlic
  • 1 jet consommé, powdered
  • 1/2 balls pork loin, or leg in pieces
  • 1 jet oregano
  • 1 to taste lettuce, thin slice
  • 1 to taste radish, in bundle, sliced
  • 5 to taste lemon, matches
  • to taste pequin pepper
  • to taste Milpa Real toast

Preparation

Cook the corn or corn without salt until it is soft. The meat is cooked in water with salt, garlic and onion.
The wide chiles are ground with the water in which they were soaked with the oregano and garlic and they are strained in the pot where the corn grains are, there is added the cooked meat and a little broth of the meat, season with the consommé and boil 15 minutes. There should be a light atole.
It is served very hot in clay bowls called pozoleros, seasoned with lettuce, radishes, oregano, chili and lemon juice and served with Milpa Real toast
