Preparation
Cook the meat with 1/4 onion, 1 garlic clove, water until it covers the meat and add salt. Let it cook for 45 minutes.
Remove the meat from the pot, shred it and set aside. In the same water the meat has been cooked in, add the corn and add a little more salt. Let it cook for 1 hour.
Serve the broth, corn and meat to a pot where the pozole will finish cooking.
Blend 3 garlic cloves, a half onion, chile guajillo and a cube of Knorr. Strain the preparation and add to the top of the broth.
Let the pozole cook at least 15 minutes. Taste and add salt if necessary.
