In a microwave bowl add the onion with the garlic, the tomato paste, the basil and the olive oil. Mix and bake for 5 minutes. Stop the oven approximately every 90 seconds and stir a little. The mixture will look doughy and weird, but do not worry, everything will be fine.
Pass the mixture to the slow cooker and add the broth, tomatoes and chicken. Season to taste and stir. Cover the pot and cook in Low for 4 or 6 hours, until the chicken is cooked and soft.
Remove the chicken and crumble it. Put it back in the pot and add the moñitos, the spinach, the Parmesan cheese and the cream. It is very important that the cream is warm, because it could be cut if you add it cold.
Return to cover the pot and cook 20 to 25 minutes, or until the pasta is ready.
Serve and enjoy.
