Preparation
From the pores we only need the white and light green part, it is split in half lengthwise and finely sliced. We need like 4 1/2 cups.
Melt butter in a saucepan and cook the pores for 10 minutes over low heat until soft.
Peel the potatoes and divide them into cubes, add them to the pores, cover the saucepan and cook until the potatoes are soft, taking care not to brown, like 10 minutes.
Add the chicken stock, boil and lower the heat until the vegetables are cooked. Season with salt and pepper. When serving sprinkle scallions.
