Preparation
Cook the zucchini in two cups of water, add salt and pepper and cook in a covered pan until soft. From these reserve a cup of zucchini and chop them to garnish.
Blend the rest of the zucchini with onion and cilantro. Pass through a masher or strainer and put back in the saucepan and add a cup of water, bring to a boil and cook for 3 more minutes.
Put broth, salt, and pepper to taste. To serve put the zucchini that we reserve chopped and a few leaves of coriander.
