Zucchini Soup with Poblano Chili

This easy and delicious recipe for Mexican pumpkin soup is ideal to accompany all your dishes. The best thing is that it has a touch of poblano pepper that will give it a unique flavor. Don't miss out on this tasty pumpkin soup!

  • 1 tablespoon vegetal oil
  • 1 cup onion, finely chopped
  • 1 cup whole kernel corn, yellow
  • 1 cup tomtato, cut into small cubes
  • 2 cups pumpkin, cut into small cubes
  • 1 cup rajas poblanas, cut into thin strips
  • 4 cups chicken soup
  • 2 tablespoons epazote
  • enough epazote, to decorate
  • enough lemon, To accompany


In a pot add the oil and fry the onion, tomato and squash until soft.
Add the corn kernels, the slices to the pot and cook for 5 minutes.
Add the chicken broth, the epazote and cook for 20 min over medium heat.
In a deep plate, serve the soup and decorate with some epazote leaves. Accompany with a rich orange and lemon water.


Serve in a deep plate.


You can add crumbled panela cheese to accompany it.
