For this recipe, you will need the following ingredients:

Poke the potatoes with a toothpick or knife, so the flavors penetrate.

Boil them in a pot with a little salt and two tablespoons of butter until they are soft.

Remove and make a cross cut in each potato.

Press underneath the potato, on the side opposite to where you made the cuts, to make the potato open up. It’s important that the potatoes remain hot during these steps. Add a bit of butter to each potato, season with salt and pepper to taste.

Place a square of aluminum foil on each potato, covering halfway, and arrange them on a baking tray.

Add the pieces of bacon to each potato.

Bake for 10 minutes at 180º.

While preparing the cheese sauce: Heat the milk. Add the remaining butter, salt, cream, and Manchego cheese to the hot milk. Stir until you create a homogeneous mixture; if the milk cools down, heat it up a bit again.

Take the potatoes out of the oven and drizzle with cheese sauce.
