HumitasLike tamales, humitas come in many varieties. It is said that their name comes from the Quechua word "humint’a," which means ball or corn dough. They are usually made with fresh corn kernels, which gives them a slightly sweeter flavor and makes them smaller than tamales. Humitas are dressed and filled according to the region, but here is a delicious recipe with cheese, traditional from the cattle ranching regions of Peru.

Peruvian picaronesPicarones are a traditional dessert from Peru. Their shape is similar to donuts and could be described as a dessert similar to fritters, which are very common throughout Latin America. Picarones are made with sweet potato and zapallo, a type of squash very common in Peru and other Latin countries. They are served with a spiced syrup or molasses, made from piloncillo, also known as chancaca or panela.
