Try this rich and healthy salad, with a crunchy breaded amaranth and a delicious tropical slightly spicy mango dressing, accompanied by cherry tomatoes, and Italian lettuce.
1/4 cups Oli de Nutrioli® extra virgin olive oil, for the dressing
2 tablespoons white vinegar, for the dressing
1 cup mango, for the dressing
1/2 tablespoons chile seeds, for the dressing
1 tablespoon honey, for the dressing
salt and pepper, for the dressing
2 cups Romaine lettuce, washed and disinfected
1/4 cups cherry tomato, cut in half
1/4 cups cherry tomato, yellow, cut in half

Beat the eggs with salt and pepper.
Mix the amaranth with the wheat bran.
Bread chicken slices with egg, flour and amaranth mixture.
Heat a pan over medium heat and heat Nutrioli® Pure Edible Soybean Oil. Fry the milanesas until they are cooked and crispy. Drain on absorbent paper.
Cut the milanesas into medium thick strips and reserve.
For the dressing, liquefy the Oli de Nutrioli® Extra virgin Olive Oil, the white vinegar, the chili seeds, the honey, the mango, season with salt and pepper.
Arrange the salad by placing lettuce, chicken strips, tomatoes and accompany with the dressing.
