A favorite of both young and old for its countless variety of flavors and freshness, ice cream has fascinated humanity for millennia. That's right, this simple dessert has a long history that spans from emperors to common people and is currently one of the most famous and widely used preparations in the world. If you and your family enjoy a popsicle, a sorbet, or even a cone, you will love our note today: the history of ice cream.
History.
There is evidence that ice cream, in one form or another, has existed since 200 BC, although no one has been able to prove who the inventor was. We do know that Alexander the Great enjoyed snow and ice flavored with honey and nectar. There are even biblical references that tell us King Solomon liked frozen drinks during the hot harvest months. Meanwhile, during the Roman Empire, Emperor Nero Claudius Caesar ordered his subjects to climb mountains to collect snow, which they then flavored with fruits and juices.
Almost a thousand years later, Marco Polo returned to Italy from his travels in the East with a recipe for what we now know as shaved ice, and historians believe this recipe evolved in the 16th century into ice cream. It wasn’t until 1660 that ice cream became available to the general public when a Venetian merchant arrived with a preparation made from milk, butter, cream, and eggs to sell at the first café in Paris: Café Procope.
Preparation.
There are countless ice creams and variations such as sorbets and shaved ice, but whenever we talk about dairy-based ice cream, these ingredients must be used:
- Milk 20%
- Flavoring 15%
- Sugar 10%
- Water 50%
- Flavorings or dried fruit 25%
How is it eaten around the world?
Halo-halo
In the Philippines, it is prepared with shaved ice mixed with milk and flavored with boiled vegetables.
Gelato
The famous Italian version contains a much lower amount of milk and more cream, making it silkier.
Ais Kacang
In Malaysia, this variation of ice cream is made from shaved ice, syrup, boiled red beans, and condensed milk.
Booza
In Arab countries, this elastic ice cream does not melt thanks to its main ingredient, salep, a preparation made from tubers.
