As every year, Oaxaca rolls out the red carpet to celebrate the Guelaguetza with lots of music, dances, food, and mezcal. This year, they aim to break the Guinness World Record with the world's largest tlayuda.
According to the Ministry of Tourism, the state seeks to create the
largest tlayuda in the world to earn a
Guinness World Record. Besides this delicacy, fairs dedicated to tejate and tamales will also take place.

If you are a lover of

tlayuda from home. Try it now!
Ingredients:
- 1 tlayuda tortilla
- 1 cup of cecina
- 1 cup of chorizo
- 2 tbsp. of lard
- 1 cup of refried beans
- 1 cup of Oaxaca cheese
- 1 cup of white cabbage
- 1 cup of tomato
- 1 cup of tomato
- 1 cup of avocado
- Red sauce
Preparation:
- Grill the cecina for 5 minutes on both sides. Cut into strips and set aside.
- Fry the chorizo for 10 minutes. Remove excess fat with absorbent paper. Set aside.
- Grill the tlayudas on a griddle until golden and set aside. Spread with lard and add the beans, Oaxaca cheese, white cabbage, cecina, tomato, avocado, and chorizo.
- Serve the tlayuda and accompany with red sauce.
