Ingredients

4 servings
  • 1 tablespoon of olive oil
  • 1 1/2 cups of asparagus cut into pieces
  • 1/4 of Cup of Water
  • 1/8 of Cup of scallion chopped
  • 1/2 teaspoonful of black pepper
  • 4 pieces of egg
  • 1 tablespoon of fresh dill chopped
  • 4 slices of smoked salmon cut into strips
  • 1/4 of Cup of goat cheese

    Preparation

    Heat a pan that you can also use in the oven at medium heat. Add the olive oil and cook the asparagus for 30 seconds. Add 1 tablespoon of water, cover and cook for 3 minutes.
    Add the chives and pepper and mix. Remove from the fire.
    Prepare your broiler oven and place the rack in the upper third.
    Beat the eggs with 3 tablespoons of water and the dill. Pour the eggs over the asparagus and cook over medium heat for 2 minutes. Cover eggs with salmon strips and cheese. Cook for 5 more minutes.
    Place the pan in the broiler and cook for 2 minutes or until the frittata is lightly browned. Remove from oven and serve.

    PRESENTATION

    Decorate the frittata with fresh dill.

    TIPS

    Accompany this dish with a Chardonnay wine.
