The quesadillas are a very common Mexican appetizer, with corn and various fillings.

Ingredients

6 portions
  • 1/2 kilos corn dough
  • 1/2 kilos mushroom
  • 2 branches epazote
  • 1 clove garlic
  • 1/2 onions
  • 1/2 kilos Oaxaca cheese, or manchego
  • black pepper, to taste
  • oregano, to taste
  • salt, to taste
  • 1/2 liters vegetal oil
  • 1/4 kilos cheese, grated
  • 1/4 cream
  • 1/4 Romaine lettuce

Preparation

Wash the mushrooms and the epazote, disinfecting the latter. Then finely chop both and set aside.
Chop garlic and onion very finely. Then in a pan with oil, season them together with the mushrooms and the epazote.
Cover and let the water evaporate from the mushrooms, add a little oregano. Remove the stew.
Discard the oaxaca cheese, then add water and salt to the dough, take a fist in your hand, knead it and flatten it until it forms a medium circle.
Place two teaspoons of mushrooms and a bit of shredded cheese in half. Close the circle by folding and joining the edges of the circle.
You must have the pan with enough hot oil so you can submerge the quesadillas and the cold ones on both sides. Then drain them.
Wash, disinfect and finely chop the lettuce. Open your quesadillas from the back and add cream, cheese and lettuce. Serve with hot sauce.

TIPS

You can simply prepare the quesadillas with tortillas, a little oil and when they are hot place the ingredients in half, fold gently and brown a little so that the cheese melts.
