Ingredients: 1 tablespoon olive oil; 3 tablespoons unsalted butter; 2 onions, large, peeled, and thinly sliced; 1 rabbit, cut into 6-7 pieces; 2 tablespoons flour; 1 cup white wine, (it goes well with Sauvignon Blanc); 1 cup chicken broth; 3 carrots, peeled and cut into thick slices; 1 sprig parsley; leaves bay; 1 sprig thyme; 1 leaf leek, dark green part; 1/2 kilos button mushrooms, cut in half; 1 cup whipping cream; 1 tablespoon lemon juice

Preheat the oven to 160 degrees (325 F). In a large clay pot (or Le Creuset type enameled cast iron), melt 1 tablespoon of butter and the oil, and cook the onion until soft and golden.
