Chocolate Roll with Mascarpone Cream

Delicious chocolate roll recipe with mascarpone cream decorated with delicious raspberries.

Ingredients

10 servings
  • 150 grams of bittersweet chocolate is equivalent to 1 chocolate bar Turin
  • 6 egg yolks
  • 6 egg whites
  • 2/3 of Cup of refined sugar
  • 1 teaspoonful of vanilla
  • 1/8 of teaspoonful of cream of tartar
  • 1/2 Cup of flour sifted
  • 1 Cup of whipping cream
  • 1/4 of Cup of powder sugar
  • 1 Cup of mascarpone cheese
  • 1 teaspoonful of vanilla
  • 1 Cup of raspberry
  • 1/4 of Cup of milk

    Preparation

    In a baking tray, put waxed paper (baking paper) and grease with butter and sprinkle with flour.
    In Baño Maria, melt the chocolate with ¼ cup of milk and let it cool for about 10 minutes.
    Beat the yolks with half the refined sugar until they are white and frothy, about 5 minutes. Add the melted chocolate and vanilla.
    In another beater, beat the whites with the cream of tartar until they are fluffy. At that time, add the rest of the refined sugar little by little. They should be soft.
    Empty a quarter of the egg whites to the chocolate mixture and wrap with the flour. Add the rest of the whites (always in enveloping form) so as not to lower the mixture. Empty the tray and spread with a spatula.
    Bake for 20 minutes at 190º C or until lightly browned. Take it out, and let it cool.
    To prepare the cream, put in a bowl and beat until it doubles its volume. Add the little glass sugar, mascarpone cheese and a teaspoon of vanilla.
    Spread the cream on the cake and roll it up. If desired, put some raspberries.
    Transfer to a platter and decorate with whipped cream and raspberries.
