Ingredients

6 portions
  • 1 cup Yoghurt Greek Style FAGE® Total 0%
  • 1/2 cups grated sweet coconut
  • 1 1/4 teaspoons gelatin powder
  • 1 cup milk cream, cool
  • 1/2 cups unsweetened coconut milk, (well agitated)
  • 1 1/2 teaspoons vanilla extract
  • 2 lemons, (grated)
  • 1 lemon, (juice)
  • 1/2 cups granulated sugar
  • 1/2 cups Water

Preparation

Preheat the oven to 300ºF. Spread the coconut in a uniform layer over a refractory with waxed paper and toast stirring several times until lightly browned (approximately 10 minutes). Remove and let cool.
Sprinkle the gelatin over 1/4 cup of cold water and let stand until it is soft for about 5 minutes. Bring 1/4 cup of water to a boil and add the softened gelatin, stir until it dissolves. Remove from heat and let cool a little (5 minutes).
Beat the cream in a bowl and add the sugar, beat until soft peaks form. Add the coconut milk, the Greek Style Yoghurt FAGE® Total 0%, the lemon zest, the vanilla, the lemon juice and the dissolved gelatine and continue beating until the mixture thickens.
Empty the mixture into a baking dish, sprinkle the toasted coconut uniformly on top, cover with foil and freeze until the mixture is firm, about 3 hours.

TIPS

If desired, it can be served with chocolate syrup and chips or chocolate zest.
