Ingredients

4 servings
  • 1 cup of rice
  • 1 cup of coconut water
  • 1 cup of coconut milk sugarfree
  • 1 raja of cinnamon
  • 2 tablespoons of vanilla essence
  • 1 cup of grated coconut
  • 1/4 of cup of Splenda® Mascabado
  • 1 cup of egg yolk bleached
  • 3 cups of whipping cream
  • enough of grated coconut toasted, to decorate

Preparation

Pour the rice with the coconut water, the coconut milk, the evaporated milk, the cinnamon stick, the vanilla essence, the grated coconut and sweeten it with Splenda® Mouscavado brown sugar.
Cook until the rice is soft and reduce the liquid in half, add the yolk and continue cooking until the preparation thickens. Remove and cool immediately.
Beat the whipping cream until it doubles its volume and forms peaks, add the previous preparation in an folding way, pour into the coconuts and freeze until the ice cream sets.
