Ingredients

10 servings
  • 400 grams of fresh berries raspberries, blueberries, blueberries, strawberries and blackberries
  • 480 milliliters of milk
  • 125 grams of sugar
  • 1/4 of teaspoonful of Salt
  • 1 1/2 teaspoons of unflavored gelatin powder hydrated in 2 tablespoons of cold water
  • 2 pieces of egg yolk cool
  • 240 milliliters of cream
  • 2 teaspoons of vanilla essence

    Preparation

    Heat the milk, sugar and salt until the sugar is completely dissolved and the milk is hot.
    Remove from the heat and add the hydrated gelatine. Mix until the gelatin is completely dispersed.
    Beat the egg yolks and add them slowly to the milk when it is warm, stirring constantly.
    Transfer the mixture to a metal bowl.
    Put the bowl in an ice bath with salt. Cool to 15 ° C.
    Wash fruits.
    Disinfect strawberries and other fruits with disinfectant drops 10 to 15 minutes.
    Drain and dry fruits.
    Store in thermally sealed bags and subject to slow freezing.
    Freeze the fruit until it is completely frozen.
    In the glass of the blender, grind it little by little at medium speed, add the sugar little by little, add a pinch of salt.
    Beat until a dense and uniform cream is made.
    Add the cream and vanilla, continuing to mix in the blender.
    Beat until it looks as thick as possible, freeze for a while.
    To serve it you can decorate with natural fruits, cookies or whatever of your choice.
