Ingredients: 5 egg yolks; 1/2 cups icing sugar, for the yolks; 2 tablespoons wine, sweet; 1 orange zest; 2 packages mascarpone cheese, (226 g each) previously beaten a little, to make it soft; 5 egg whites; 1 pinch salt; 1 package ladyfingers; 1 cup espresso coffee, cold; 2 tablespoons wine, sweet; 1/2 cups cocoa, for decoration

For the cream: beat the egg yolks with the sugar, 2 tablespoons of sweet wine, and the orange zest for 5 minutes until you achieve a fluffy and smooth consistency. Then gently fold in the mascarpone cheese and set aside. In a separate bowl, beat the egg whites with a pinch of salt for 5 minutes, until they double in volume (stiff peaks) and gently fold them into the mascarpone cheese mixture. Set aside.
