For the cream: beat the yolks with the sugar, 2 tablespoons of sweet wine and the orange zest for 5 minutes, you should obtain a spongy and smooth consistency. Then mix in an enveloping way with the mascarpone cheese and reserve.
Apart, beat the egg whites with the pinch of salt for 5 minutes, until they double their volume (nougat point) and add them in an enveloping way to the mascarpone cheese mixture. Reservation.
Mix the coffee with the wine and reserve.
Soak the soletas in the coffee and arrange them in a mold forming a base, then cover it with the mascarpone cream. Repeat the process until the mold is filled, cover completely with cream and refrigerate.
Garnish with sprinkled cocoa, cut a slice, serve and enjoy.
