Ingredients

15 portions
  • 2 1/2 cups flour
  • 3 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda, royal
  • 1/2 teaspoons salt
  • 1 1/2 cups sugar
  • 6 tablespoons unsalted butter
  • 2 eggs
  • 1 1/4 cups milk, with a few drops of lemon
  • 1 1/2 teaspoons white vinegar
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons red food color
  • 5 tablespoons butter, (for cream cheese bitumen)
  • 4 teaspoons milk, for cream cheese bitumen
  • 1 package cream cheese, 8 oz. (for cream cheese bitumen)
  • 3 1/2 cups powdered sugar, for cream cheese bitumen
  • 1 1/4 teaspoons vanilla essence, for cream cheese bitumen

Preparation

Preheat the oven to 180ºC.
Put 30 pieces of paper for cupcakes in a tray to prepare the pancakes.
Mix the flour with the cocoa, bicarbonate, royal, and salt in a medium bowl. Stir with a balloon whisk to incorporate the ingredients.
Put the sugar and butter (previously softened in the microwave) in a blender and beat on medium speed for 3 minutes. Add the eggs, one by one, mixing well after each addition. Add the flour mixture and 1 1/4 cups of milk (with its lemon droplets), alternating between the flour and the milk, finishing with the flour. Add vanilla and red coloring, mix well.
Put the mixture inside the cupcakes and cook for 20 minutes until a toothpick comes out clean when inserted in the center. Let cool for 10 minutes on a rack.
To prepare the cream cheese bitumen, mix in a blender 5 tablespoons of soft butter (you can soften it in the micro), 4 tablespoons of milk (with its lemon drops), and cream cheese. Beat at high speed until fluffy. Gradually add the icing sugar and beat until the mixture is soft. Add the vanilla and stir well.
Put the bitumen in a dulla and form on the pancake strips simulating the brain.
