Pears to Red Wine Express

This technique of poaching honey works very well to make syrups or honeys and accompany delicate fruits.

Ingredients

  • 1 kilo of pear firm bosc and uniform size
  • 1 bottle of Red wine Merlot grape
  • 3/4 of Cup of sugar
  • 1 strip of lemon peel
  • 1 cinnamon slit 5 cm
  • 2 cloves whole

    Preparation

    Remove the skin from the pears, leaving the stem intact. Starting at the bottom of the pear and with the help of a disheartener, remove the heart of each pear, stopping at 3 cm from the stem. Cut a small slice from the base so it can be stopped.
    In an Express® Pressure Cooker, place the wine, sugar, lemon peel, cinnamon and cloves. Mix to dissolve the sugar and add the pears, arranging them in the center of the pot. If the pears are not covered by the wine, add the necessary water to cover them.
    Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out, lower the flame to medium and cook for 5 minutes.
    Remove the Express® Pressure Cooker from the heat, let cool, remove the pressure regulator, open the Express® Pressure Cooker, and that's it!
    Check that the pears are soft when chopped. Remove with a slotted spoon and allow to cool to room temperature.
    Replace the wine mixture on high heat and reduce until you get 3/4 cup and the mixture acquires the consistency of a thick honey.
    The pears should be served at room temperature and the syrup should be reheated before serving.

    PRESENTATION

    Accompany with whipped cream or vanilla ice cream.

    TIPS

    If you want the pears to take more color, add 4 drops of red food coloring to your Express® Pressure Cooker during cooking.
