On a floured surface, roll out the puff pastry until you have a rectangle with a thickness of 3 mm, brush with egg, and sprinkle with sugar, cinnamon, and walnuts. Roll up to the middle of the rectangle, then roll from the opposite side to have 2 rolls in the center, as shown in the video. Freeze for 15 minutes and set aside.
