Melt the butter in a medium skillet over medium-high heat. Add the apples; cook for 5 to 7 minutes or until soft and golden. Add the brown sugar; cook for another 2 minutes or until the sugar has dissolved. Remove the skillet from the heat; stir in 3 tablespoons of the peanuts and the cinnamon. Place this mixture evenly in the center of the tortillas; sprinkle with cheese. Fold the tortillas to completely enclose the filling. Heat a large non-stick skillet over medium-high heat. Add the tortillas, two at a time; cook for 2 to 3 minutes on each side or until both sides are lightly browned. Repeat with the remaining tortillas.
