Melt the butter in a medium skillet over medium-high heat. Add the apples; cook 5 to 7 minutes or until soft and golden brown. Add the brown sugar; cook this for 2 minutes or until the sugar has dissolved. Remove the pan from the fire; add 3 tablespoons peanuts and cinnamon. Place this mixture in even amounts in the center of the tortillas; Sprinkle with cheese. Fold the tortillas to completely enclose the filling.
Heat a large non-stick pan over medium-high heat. Add the tortillas, two by two; cook 2 to 3 minutes on each side or until both sides are lightly browned. Do the same with the rest of the tortillas.
Serve the quesadillas with the cover and the remaining spoonful of peanut.
