The secret of this recipe? It can be prepared up to 3-4 hours before and refrigerated to just bake just before eating. The souffle is made with very basic and rich ingredients. Delicious!

Ingredients

6 portions
  • 300 grams bittersweet chocolate
  • 1 1/3 cups milk
  • 1 tablespoon cornstarch
  • 6 egg yolks
  • 3 egg whites
  • 1/3 cups sugar
  • 1 tablespoon butter
  • 1 cup sugar, to cover the soufflé dishes

Preparation

Preheated oven at 200 ° C.
Melt the chocolate in a saucepan in a bain-marie slowly.
In a small saucepan over medium heat heat the milk with the tablespoon of cornstarch. Remove from heat and add chocolate mixing with a balloon whisk.
Add to the chocolate mixture the egg yolks from little to little and incorporate with the balloon whisk.
With an electric mixer beat the egg whites for 2-3 minutes. Add the sugar from little to little and beat for 2-3 more minutes.
With a spatula, add the egg whites with the chocolate mixture from little to little and mix (do not beat).
Prepare 6 small molds to make souffle engracing them with butter and sprinkling them with sugar. Pour the mixture into them reaching up almost to each mold.
Cover the molds with plastic paper and refrigerate until baking.
Remove the plastic paper from the souffles and bake for 15-20 minutes. Serves hot

PRESENTATION

Serve the souffles fresh out of the oven to your guests, they should have been wonderfully fluffed.

TIPS

Preheat your oven until 15 minutes before baking the souffles to ensure it is already at the optimum temperature.
