For the caramel, cook the sugar in a pot for 5 minutes until it turns amber. Do not stir to prevent crystallization. Pour into a cake mold and let cool. For the chocolate cake, in a bowl mix the dry ingredients. In a mixer, cream the butter with the sugar, add the egg yolks and beat until fluffy, then add the cream, vanilla extract, and melted chocolate. On the side, beat the egg whites until they double in volume. Add the powders to the yolk mixture gently and then softly mix in the egg whites until fully combined. Pour into the caramel-coated cake mold and spread evenly. For the flan, blend the evaporated milk with the condensed milk, eggs, vanilla, and rum. Pour the flan mixture over the cake gently with the help of a spoon to avoid mixing, cover with aluminum foil, place in a water bath, and cook on the stove over medium heat for 50 minutes or until cooked through. Cool and refrigerate for at least two hours. Unmold and decorate with walnuts, strawberries, and cookies.
